@jakedduck1 That’s a good sounding recipe. I’ve actually never had stuffed peppers as a main course, just as a side dish, stuffed with a bread stuffing.
When it says add water as necessary you keep an eye on it occasionally as it bakes and if it starts to get too dry you add some more water. You don’t want to add too much because when it’s done you want that to be a gravy. Use a timer and set it for about every 10 minutes so you don’t walk away and let them burn — that would be a big cleanup which I am sure you don’t want.
To those of you who do have stuffed peppers with a meat stuffing, do you just serve the pepper or do you add side dishes? I have a hard time picturing a lone stuffed pepper in the middle of a plate being dinner!

In the past when I have had them, keeping in mind I’m not the kind of guy to have a Thanksgiving style meal (Unless someone else fixes it.) Like when my friend brings me food she always brings salad, main course, sides, bread, desert. Jeez, if I fix a meal I’m lucky to have just one of those things, in fact cereal works well. When I make Stuffed peppers I just have them alone since they have meat, rice and the veggie all in one. On a very rare occasion I might make a salad if I get a burst of ambition.

@contentandwell Stuffed Peppers are good served with a side of applesauce and cornbread.
