Ok, you've got me interested in the caramelized onion idea. As I've not done it before, tell me: if you cook them over medium heat how long does it take for them to carmelize?
Adding the mushrooms sounds great as well!

@hopeful33250 that's in interesting question, I'm not really sure. I'm bad at following recipes to the letter...

I love vidalia onions, so I cut up a vidalia onion, put olive oil (not EVOO, regular olive oil), in a pan, and sautee the onions until they are translucent, along the way, I add chopped mushrooms and saute. Alittle fresh garlic is good in there too if you have a clove of that, chop one and add it (don't burn or overcook fresh garlic), then when the onions and mushrooms look done, add the kale. That kale gets done quickly. A little balsamic vinegar drizzled on it is delicious.

I must have found a kale recipe somewhere along the way, and I doctored it up 🙂

I think I mentioned before, I'll keep salmon fillets in the freezer and thaw one. Saute the salmon in the same pan. I often have the kale with the salmon. It's an easy and quick, 1 pan, meal.
