Recipes, Food Tips, Healthy Eating & More
Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.
Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.
Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!
I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Hi @debbraw and @lioness I agree with you both, it was a wonderful recipe!
@hopeful33250 - keep us posted on how the sweet and sour pork turns out for you. It made a bunch. I think next time I'll cut down the amount!
@ellerbracke - Your comment is so good that I can't ignore it. Like you, chicken soup is my go-to food when I'm under the weather. I'm hoping my issue is resolved. I am feeling fine and I'm off the soft diet. I have an endoscopy in a few weeks so we'll see. Wish me luck!
@lioness - glad you liked the sweet and sour pork!
Teresa, How did your sweet and sour pork turn out?
Very nice, @mockinbrd. The only problem was the 10 minutes in the pressure cooker made the vegetables mushy. I may try cooking them separately next time. The pork was very tender and tasty. I was using a regular pressure cooker, not the insta-pot. Perhaps that made the difference in the mushy vegetables.
@hopeful33250 - when you say vegetables are you talking about the onions and green peppers. Mine were not crisp but I wouldn't call them mushy. Maybe you could just do a couple of minutes less in the pressure cooker? I don't know how an insta-pot compares but I would think it would be the same.
Yes, @debbraw, I meant the onions and green peppers. It was like they had been pureed (there were a few slices of the onion that were visible). They were completely absorbed by the liquid. The insta-pot must cook differently than the traditional pressure cooker.
Good morning everyone- I am back after taking some personal time. I have accrued some new recipes that I am excited to try. One recipe in particular I am very curious to make is Pasta with Chickpea sauce, https://www.cookinglight.com/recipes/pasta-chickpea-sauce
It also looks like there's plenty of room for embellishment- adding other ingredients
@merpreb Good morning, Merry, glad to "see" you this morning! This recipe indeed looks like something that can be tweaked for many different tastes. Thanks for thinking of us!

If you want send it my way. I’ll try it out for you. I’ll eat it even if it’s a flop. I’d hate you to serve it untested to your family. No need to thank me, I just want to help out a friend. That goes for all my other cyber friends too.
