@jakedduck1 I have never used the microwave to cook a chicken breast. I often either poach one to cut up and put on a lunch salad, or sauté in a little EVOO.
If you plan ahead buy regular chicken breasts and simmer them, covered, for about 25 minutes (time varies depending on size) then leave them in the water, still covered, for about a half hour. The chicken comes out the best that way, and then you can boil down the water to make a very flavorful broth. If you are going to use the broth you can add extra flavor by adding some onion and seasonings, and lemon juice or grated lemon rind. I really like tarragon with chicken.

@contentandwell has some good ideas, @jakedduck1. I've also used "cooking bags" for the oven. Add seasoning, other veggies that you have on hand. They will come out very moist and flavorful. There are cooking directions on the box that will give you cooking temps and times.
