Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

@parus Like others, I'd be tickled to be your neighbor! I'm trying to stay away from sweets, though. But my dad would have loved to been your neighbor. One of his favorite sayings was, "I never met a cookie I didn't like." Got to love that saying.

@parus I love to bake, but not keep around the house. Times were in the past that I certainly would keep it around the house and eat them all myself. Not good for the waistline or the heart or my whole body. Now I usually tell somebody that I'm going to bake so that they are they are waiting for it and I have less excuse to not make something. Anxiously waiting for the first fruit of the season because I love making cobblers. My diet is fairly restricted now but by golly it doesn't stop me from wanting to cook!

@gingerw It doesn’t stop me either. I enjoy trying new things. One of those creative cooks. Sugar cookies for Easter. Hoping to be able to do some with my little scamp.

@parus What a joy if you are able to get your grandson interested in cooking with you or baking, or anything creative. Can you can you just imagine the memories that you both will have! I have heard so many stories from adults about having some activity that was shared that really left an impression years later!

@gingers I remember showing online now to make cupcakes he was 3 every time I opened the I pad it went to his to make cupcakes then we began making them Now he makes them with his Mom,s help and sells them . It's a little business for him He loves to make cupcakes ,hasn't advanced get to cakes Someday ?

@gingerw I am working at leaving happy memories. My adult children have no happy memories with their grand parents. My grandson oft heads to get the craft basket. We use white paper plates as the background. I do bake the cookies ahead of time because of limited space. At 4 he gets a bit over enthusiastic.
I realize we are sharing healthy recipes and sugar cookies are healthy even though not in a nutritional way body wise-it can boost the spirit to make them and share. It helps my mind and spirit.

Hi Jake,
Most good things don’t take 5 minutes unless you go to a Whole Foods type of store and pick up healthy frozen meals for one. May I suggest you take the time to prep some veggies or buy them already cut up. I toss any veggie I have including red potatoes and toss with a good olive oil , salt and pepper and throw them in the oven at 400 degrees. Have also thrown in grapes. Takes a half hour or more depending on how many you have. I like to add chicken sausage with it and add some kale about the last 5 minutes. Veggies are all nice and browned and carmelized. Line the pan , make a lot to reheat in microwave, minimal clean up. You can add some of those veggies to eggs for an omelet. Or spread on a Naan and cover with a little cheese under the broiler.

Stuff an avacado with canned salmon or tuna. Buy pre made soups and pre made salads if you don’t like to cook. Add some noodles and frozen veggies to chicken or beef broth...that’s 5 minutes. Avoid processed meats on white bread if you can.

For those of you who do cook, a great snack is to toss a can of chick peas or garbanzo peas with olive oil and seasoning into the oven until they just start to turn brown, around 400..... So nutty and yummy warm or cold. Popcorn is a good snack...I use the jarred kind and pop it with coconut or avacado oil which don’t burn.

Can’t go wrong with olive oil...and yeah I love to cook but also pick up healthy frozen meals ...always reading the labels....

@imallears - Wow - Thanks for the great simple cooking tips you offered here. I want to come and eat at your house! I especially love your suggestions for roasted veggies. Years ago, a lady at the farmers market told me she does all of her vegetables this way because its so easy AND delicious. I've tried that, but I've never gone the extra step of putting in grapes or sausage or other items. I found some carrots and parsnip in my frig that are overdue for cooking so I'm going to try this tonight with the last of bag of dried cranberries. I can't wait! Love your other suggestions too. Thanks for sharing!

Try my quick, homemade tomato soup: 2 tablespoons olive oil, 1 yellow onion, chopped, 32-ounce carton unsalted chicken broth, 1 teaspoon garlic powder, 2 teaspoons sugar, 1 1/2 teaspoons dried basil. Put oil in soup kettle. Add onion and saute 5 minutes. Add all remaining ingredients. Cover and simmer over low heat for 15 minutes. Garnish with fresh basil or Parmesan cheese if desired. Makes 8 servings.

Forgot to include a 28-ounce can of tomato puree.
