Better late than never:

Ground Turkey Sloppy Joes
2 TB olive oil
1 med onion, finely diced
1 bell pepper, finely diced
2 cloves garlic, minced
¼ cup ketchup
1 TB tomato paste
1 TB brown sugar
1½ tsp Dijon mustard
1½ tsp Worcestershire sauce
1 tsp soy sauce
1 tsp smoked paprika
1 tsp kosher salt
½ tsp freshly ground black pepper
1¼ lb ground turkey
1¼ cup tomato sauce
4 hamburger buns, toasted and buttered
1 TB apple cider vinegar

Set a large skillet over medium heat and add the oil. Once oil is heated, toss in the onion and bell pepper and sauté for about 10 minutes, just to soften them. Add in the garlic and cook for another minute or so, just until you begin to smell the garlic.

Add in the ketchup, tomato paste, brown sugar, mustard, Worcestershire sauce, soy sauce, paprika, salt, and black pepper and continue cooking, stirring occasionally, until the mixture begins to thicken, maybe 5 minutes. Don’t let it catch on the bottom of the skillet and reduce the heat if you need to.

In with the turkey and up with the heat to med-hi and cook for another 10-15 minutes to get the turkey well-browned, breaking up the meat until it’s the size of rice grains. Pour in the tomato sauce and stir together.

Bring the mixture up to bubbling, reduce the heat and simmer until it thickens, maybe another 5-10 minutes.

Off the heat, stir in the vinegar, then taste for seasoning and adjust if necessary. Serve immediately on toasted buns.

Enjoy!
