Yes, the time frame you give allows for plenty of time to adjust to the effects of ADT and your radiation treatment. If you stay active through all your treatment as you should, then you will be able to do that hiking trip no problem at all. You will likely get a little more tired than usual but not to the extent that you would rather not do it at all.
