I believe you can have your watch display all that you listed. All Apple watch changes are made from the “watch” app that you need on your iPhone. I REALLY enjoy my Apple watch. The stats that I can view from the “activities” app are pretty amazing.

The lack of directions received for so many products is pitiful. But i guess on the bright side, I have to use my brain more to figure this stuff out. If you can find a customer service phone number, generally their customer service is great. Or if you live near a city with an Apple store, you can make an appointment there to go over things.
