I agree about the dairy. I deduced that if I'm totally off dairy for many months or a year, I am OK to have a small amount of cheese or other. I do like goat cheese and in a pinch I get a GF cheese substitute. It's pricy with no food value, but once in a rare while it's worth it.
I don't react to oats. It's a different gluten that many Celiacs react to. I get Bobs organic, GF oats. What GF digestive enzyme do u take? It's been a long time since I checked and there weren't any since then.

i like pancreatin (not plant source) or Now super enzymes.
hard to live without dairy. the substitute isn’t very good.
i have found i am good with dairy for about 6 months at a time.
since i have been on antihistamines H1 and H2, it feels like my body is handling dairy better, but too soon to be sure.
