Similar experience with iron. Even before I was diagnosed with PV, my iron was low. I was diagnosed with PV at 47. I only take 81 mg of aspirin and have phlebotomies when needed. So far, I can go almost 8-9 months before I need a draw. I still struggle with what symptoms Im having because I am also going through perimenopause. I don't take any iron supplements but do eat red meat and cook with cast iron pans. I try and use tumeric in my food when I can, stay hydrated and exercise. I don't exercise probably as much as I should but with raising a 12 and 17 year old, they keep me moving quite a bit.

Wow, I am jealous. 8-9 months between phlebotomies, that’s great! Mine are every 6-12 weeks. But I am lucky that I don’t really have any symptoms of PV. I was diagnosed at age 57 and started low dose Hydroxyurea at age 60. I am on aspirin also. I just wish there was something to do with the low iron.
