Pineapple and Tacrolimis?

It's very comforting to have my transplant family there when I need you!
Every once in a while my Tacrolimis blood level results bounce around from too high to high low. I always think it's probably something I ate or something I did. My target range is 6 to 8 and my last test result was 10.5.
I read on the internet that in addition to the NEVER EAT LIST (grapefruit, pomegranate, seville oranges); too much spinach,
banana, sweet potato, tomato
sauce, etc can cause a spike in the
TAC blood level. I never know what "too much" means. Do you eat half a banana or a sweet potato? Do you eat spaghetti and meatballs with marinara sauce? I get nervous about everything I eat.
It's very comforting to know that pineapple is something you eat (except for Rosemary and her itching response!)

My sister always says to keep a food log and then bring it to the doctor and that way you can see what might be effecting it. I don't do it, but she always tells everyone to do it regardless of the issue. This might be a good idea for you if you believe it might be something you are eating.
Due to the potassium in bananas and plantains, I can't eat them. I also can't have papaya. I usually have tomatoes at least once a week. I will make spinach from time to time, but have a lot of things (other than those things on the never eat list) in moderation,
Also included on the never eat list are: Salads made outside of the home, you don't know how well they wash the ingredients (I had E.coli that we believe came from salad). Food from salad bars, buffets or food trucks. Cold cuts and other high bacteria loaded items.
