Do you have any links to info on high gluten wheat starch being sprayed on produce? I know they are often sprayed with various chemicals. But I have never heard of produce being sprayed with wheat starch. I can’t find anything about it thru a Google search or even on the website Celiac.com.

I also have celiac and have been on a GF diet for over 20 years. I’ve done a lot of research on celiac disease and have never come across any information like that. And I have never had a reaction to fresh produce that I am aware of.

After eating a bag of frozen veggies I had gotten ill with a rapid pulse etc. I called the frozen food mfg and explained that was the only product I had eaten all day; explained what was happening and advised that I was going to go to the ER, have my stomach pumped and the contents analyzed for wheat, soy or msg. Advised if anything was detected other than veggies I would look for an attorney because their veggies were advertised as all natural, no additives or preservatives. After being on hold for a few minutes I spoke with a different person who explained how food was sprayed to keep the color and the company bought the product after it was sprayed which is how they could advertise the way they did because THEY did not add any ingredient to the product. At that time they advised me not to eat any of their frozen food So I started calling people and found out that what they told me was basically true I also found out that the vegetable spray that most stores used as a misting was not just water. This all took place in the 1980-1990s. I believe there have been some good changes made ( esp when they list top allergens now) but I have learned from experience and calling each individual company and speaking with representatives. I use the sway test to this day on food I’m not sure about. I have nothing to actually send you in writing because this is just from experience and speaking with others and basically …….getting sick and then eliminating until I found the cause. Good luck🌻

I forgot to include this in my previous reply; fresh fruit in my area was only “safe” in the summertime because I purchased from local farmers; during the winter the fruit came from knows where . It seemed that when I purchased in the grocery store it was a hit or miss deal so that’s why I started doing the sway test. This was all back in the 1990s and I just got into the habit of testing food and supplements before I took them. It was so long ago maybe they don’t use chemicals like they used to?? But I still use it to this day because it has been helpful even for makeup, meats etc Maybe I’m just stuck in my old ways and habits…… it has always been a good “ guidance system” for me🌻
