Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Are you sure that cauldron wasn’t something you cooked I’ll probably always wonder about that. “Or is showing up at the door scary enough? hahaha”
For me or them? Or do you mean you showing up at my door, that probably would be a horrifying experience alright, lol.
Last year I didn’t answer the door. I’m sure the goblins remembered the year before. I got bags and put 20 pieces of candy in them. I got more kids than ever. I don’t mind the little monsters but when adults show up it’s not much, out go the lights. Besides the little ones come early. I use to put out automated monsters and fog machine and witch storing cauldron. A few of the little one cried. Some of my favorite decorations were stolen. It’s not so much the loss of the stuff but the fact I was with my Grandmother when I bought some of it. I’m sentimental and I very few of those memories. When my mom passes 99% of those memories will be gone, as though I never had parents. She remembers virtually everything. It will be like I was 15 again. Back when every memory I had disappeared.

@jakedduck1 It really is hard to lose the things we hold dear because they have sentimental value. I wish we had recorded more about our grandparents, 3 of whom passed away before I and my siblings were born. Now there is no one left from my mother’s generation.
I have some pieces of jewelry that were my mother’s, and a gold bracelet that was my aunt’s. On special occasions like my son’s wedding I wear that jewelry, it’s like I feel they are close to us then.

I agree with you about kids on Halloween. I hate when teenagers come around, no costumes, just wanting candy. My husband and I both feel that the kids have gotten nicer and more respectful than what we were seeing 10 or 15 years ago though.

I had a funny incident happen on Halloween once. A couple kids all dressed up held out their hands and after I gave them some candy one said “I want more.” It was’t like they were only getting one piece. Then he says it again. And says “why can’t I have more?” “I want more!,” “I want more!” The he started to cry. What a spoiled miserable brat I thought and he reached in my bowl for a handful of candy. Then they both started laughing uncontrollably. It turned out to be my friends. They were on their knees. They got me good. I’m sure I paid them back but I don’t remember it now. My friends, sometimes I wonder???

I know what you mean. It
I’m sorry so many members of your family are gone. My Mom is the last of her side. All my Dads side is gone. My Dad was quite a it older than my Mom and died 27 years before I was born. A lot of my Dads tools were stolen and like you I feel close to my Dad when I use them. It will be very difficult and frightens me when she passes.

@hopeful33250 I love cornbread but it is fairly caloric. I love biscuits too but they are even worse! I try to not indulge in too many carbs except whole grain ones.

Oh cornbread with butter & honey. I love it!!! Haven’t had it since I started my diet. Like you whole icky grains.

Hi,

People stealing decorations never ceases to amaze me. I’ve kept things from when my children were born and all through school. A few years ago I boxed up some things and gave my son and daughter their memories for my grandchildren. My daughter has these beautiful colored ink drawings of anatomy that my dad did when he was taking night courses while working. My son has my husbands microscope with the glass dome. My dad kept a 5 year diary during the depression in NY. What an amazing narrative.
I passed it on to my son for safekeeping. He wrote in it briefly every day up until he met my mom and then I guess he got too busy to write lol. My daughter gets a couple of my moms jewelry pieces and my granddaughter gets mine. All my parents family are gone of course...there may be far away cousins that I am not aware of.

There are pictures, of course. A long time ago I found very old birth certificates and documents from my great grandparents and was able to identify who was who along with pictures. So I marked each photo and also found my moms visa when she came from Ireland to NJ. She looked like Jean Harlow. I treasure pictures of my brother who died when he was 6 and I was 5.

I have an large amount of mementos from my 4 grandkids and still accumulating. It must be hard to be the last , even when good friends pass on and having a growing and extended family is a blessing. My husband found out that one of his maternal grandfathers wives was 1/4 Cherokee. Don’t remember if there were children.

If I don’t stop reminiscing, the day will never start here in hot sunny FL. And then next time I tell you of the 4 sons my single Uncle sired who we found out existed after he died. Family! Good for the soul the mind and the heart...and lots of laughs.

Hi all,

First I was sautéing some zucchini in avacado oil and was looking at a peach I had left that was getting way overripe (wasn’t sweet anyway). So I sliced it with skin on and threw it into the pan to cook along with the zucchini. Both zucchini and the peach got nice and brown. What a great combo if you like things on the sweet side. I only seasoned the zucchini with Creole seasoning.

Next I had bought some flaxseed meal because I made flaxseed and almond flour muffins..they had almond butter and bananas and some chocolate chips in them....excellent. I made my 450 degree chicken breast and coated it with flaxseed meal and bagel seasoning. Awesome flavor...the flaxseed gives it a slightly nutty flavor. I will be using this meal instead of breadcrumbs in the future for anything that calls for breadcrumbs....a healthy and flavorful alternative. Flaxseed meal is a staple in the supermarkets here and should be near the flours or, if there is a gluten free section. It should be there.

Staying healthy with flavorful substitutes...nothing you can’t read here Leonard.

Thanks for moving me, I’ll remember that next time.

I’ve roasted apples with skin on and pineapple in a 400 oven...have used frozen pineapple also successfully...any firm fruit holds up well. What I did with the peach I have done with plums. So often the fruit we buy is not sweet but if you sauté it in a little butter or olive oil you’ll bring out the sweetness. I use pineapple in a stir fry often.

Flaxseed meal in meatball mix results in super soft meatballs. Haven’t tried it in meatloaf but was wondering how the texture would be. I sprinkle the seeds of flaxseed and chia on salads all the time and just put some of the flaxseed meal in my oatmeal this morning (probably a tablespoon) along with my ever present blueberries (they go in my salads too).

I have a sweet tooth and always need something fruity in the morning which is why I always have craisens, raisins and frozen fruit on hand.

You know you can always put vanilla ice cream on top of sautéed fruit....or yogurt. A healthy indulgence and then sprinkle some flaxseed meal on top of the yogurt or ice cream.

I like mushrooms but I wouldn't put them in this recipe...could add a boiled potatoe. Smithfield is one of the best bacons and I buy that several times a year.
Left over corned beef and cabbage..We called it Bubble and Squeak....Fried the cabbage along with the leftover potatoes and corned beef in some butter.Same kind of taste as this recipe. Really tasty and bacon tastes good with anything right?
