Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

your instructions for the sprouts are right on, roast them in the oven, sliced in half, drizzled with olive oil and some salt and pepper. I roast them for 10 minutes and then flip them over, roast another 10 minutes until done.

I learned recently to bake the fish with orange slices. place the orange slices on the foil, then place the fish fillet on the orange slice, cover with another orange slice. the orange provides amazing flavor and keeps the fish moist while baking.. its so quick and easy, dinner is ready quickly!

I also love sprouts this way and usually roast all my veggies. I’ve roasted red grapes along with the veggies and , about the last 5 minutes or so, have thrown in kale rubbed with olive oil. I also turn off the heat and sprinkle fresh spinach among the veggies and just let the leaves wilt. Great way to use up bits and pieces of vegetables.
I’m making a no cream leak and spinach soup today. I didn’t want to discard the green bottoms so I just sliced off about an inch of the very ends and cut the green parts into small vertical pieces and sautéed in olive oil for a few minutes. Added some fresh spinach at the end.
I was amazed at how wonderful this was. Leeks are so mild and heavenly...no bitterness in the green parts.

@imallers This sounds good the leeks what broth do you use then?

You all are making me hungry all this talk about fresh veggies and roasting and all. I have never been much of one for roasting vegetables usually just seem them and then season with a no salt multi herb seasoning. Think I might have to try this!

Steel Cut Oatmeal

One of my favorite healthy breakfasts is steel cut oatmeal, its kinda like McDonald's oatmeal only better because it's homemade.

1/3 c steel cut oats, Quaker quick steel cut oats
1 c water
1 teaspoon of brown sugar (optional)
1/4 to 1/2 apple , diced (pink lady or braeburn are my favorites), depends on size of apple
raisins or other fruit (optional), I like blueberries
milk or half and half (optional)

cook the oats according to the package, about 5minutes in boiling water. While oats cook, dice 1/2 an apple.
Place apple in a bowl, cover with oats. Add brown sugar, milk, fruit, to your liking. Enjoy!

Hi.
1 tblsp olive oil, 1clove crushed garlic
1 large or 2 medium leeks, , chopped well...not the green parts
2medium zucchini, chopped
2 tblsp fresh basil
2-3 cups fresh spinach, chopped

Heat oil, add garlic, leeks and zucchini, tsp salt and 1/tsp pepper, stirring often 3-4 minutes until leeks are soft. Add 1 cup chicken broth stirring until zucchini falls apart 8-10 minutes.
Transfer all to blender and add the basil to blend. Pour back into pot and add the other cup of chicken broth. Then you can add the spinach and also cooked chicken if you want and cook another few minutes until heated through.

I’m going to make this tomorrow without the chicken and maybe blend the spinach in the blender also. I had another soup for lunch I’m getting stitches out tomorrow for gum and tooth surgery I had on Tuesday so was looking for soft food. Had a root canal last week and an Apioectomy this Tuesday. I’ll let you know how it is and if it needs any tweaks.

@user_chdb5e8ac Erin - I'm having salmon for dinner and you gave me the perfect sidedish. I love roasted brussel sprouts. I shave them, mix in some cranberries, spread them over the cookie sheet and sprinkle with parmesan cheese and olive oil - and some salt & pepper. Roast at 400 degrees for about 20 minutes and it is my idea of heaven!

@karen00 Anything can be roasted broccoli, cauliflower carrots ,sweet potatoes onions whatever u like
