Recipe: Watermelon, cucumber, and feta salad

Salads don’t have to be boring! This refreshing salad is a mix of fruit, vegetables, cheese, drizzled with a balsamic glaze, and is under 100 calories per serving. It is the perfect side dish to serve to guests at cookouts this summer.

Number of servings: 6

Serving Size: ¾ cup

Ingredients

  • 4 cups cubed watermelon, chilled
  • 1 cup diced cucumber
  • ¼ cup thinly sliced red onion
  • 1/3 cup crumbled feta cheese
  • 2 tbsp. fresh mint, chopped
  • 2 tbsp. fresh basil, chopped
  • 1 ½ tbsp. balsamic vinegar
  • 1 tbsp. olive oil
  • Salt & pepper to taste

 Directions 

  1. Add balsamic vinegar, olive oil, salt, and pepper to a small bowl. Whisk together until smooth and set aside.
  2. Add watermelon, cucumber, and red onion to a large bowl or serving tray.
  3. Right before serving, top with feta cheese, fresh mint, fresh basil, and balsamic olive oil mixture.

  • Monounsaturated fat 2 g
  • Cholesterol 7 mg
  • Sodium 98 mg

  • Added Sugars 8 g
  • Protein 2 g

That happens, Marilyn. Every recipe can't be for everyone! Is there a salad-type recipe with a favorite ingredient of yours that you'd like me find?

I just make the standard lettuce and tomato variety salad. You see I do not eat fruit and lately it seems everyone puts fruit into their salads. Just the sight of it makes me want to throw up. So it must be because of my fruit issue.

I put Avocado fruit in my salads …
It’s great fiber and protein..there are plenty of ways to get vitamin C and fiber in our meals..without sugars..
