I am sorry to hear about all you are going through. I hope you can hear the empathy and concern from so many who have responded to you here. I also have empathy for how hard it can be. I had Long Covid for 1.5 years and sustained a vaccine injury as well. Then got Covid again 2.5 years after the first infection and some Long Covid symptoms returned. Covid has effected my digestive, endocrine, cardiovascular and nervous systems and given me mood disorders.
What has helped me has not been the Long Covid clinic at UW Medicine here in Seattle. My naturopathic doctor has helped me so much. And acupuncture. Covid can take a huge toll on any and all systems of your body and cause depression and anxiety. I have found that holistic medical care and therapy have helped the most. Long Covid can be very isolating when no one understands and MD doctors don’t have answers.
I am much better after three years now of working daily on healing myself. The main key is reducing inflammation through diet, nutritional supplements, finding positive social support and refusing to give in to the monster spike protein. Viruses are invisible sociopaths that want to survive at all costs and have no regard for how they damage their host. You have to refuse in your mind to let them win. With time you can get better.
With gut issues, you have to restore the healthy balance of good bacteria after the spike protein has damaged the gut lining and tissues. You must reduce inflammation in the intestines and brain, as the gut has the same receptors as the brain. Your despair may get better as you heal your gut and brain inflammation.
Try finding a really knowledgeable naturopath and/or functional medicine doctor who takes your insurance. Make them your PCP and it should only be a copay.

I agree with a good nutritional diet. In 1985 I was dizzy, visited many doctors, even an allergy clinic that did not help. It wasn't until I was put on a hypoglycemia diet and eight weeks later I was well. Nutritional food is most of my medicine.
Also, as mentioned above, a positive attitude.
