If you eat beets eat the tops too.
I didn’t like regular beats so started out eating pickled beets then migrated to the regular ones.
As @imallears says (more or less) you need to be more adventurous, wishing your constraints, of course. Can you eat candy?

Yes, I think my 2023 meal plan will include beets! And the tops.

Can I eat candy? Yes. Chocolate is pretty much a no-no or very little, given my renal diet. due to phosphorous content. And to your horror, I am not a big fan of chocolate anyway! My favorite candy is Good-N-Plenty, but licorice is not recommended for a renal diet, so I treat myself only once in a while to it.

All vegetables have some amount of natural sugars. I always eat the greens on beets and some other vegetables. Sautéed in EVO and some s and p…maybe with some diced onions …I’ve even put nuts and golden raisins in mine if too bitter…is very healthy. It’s a shame to throw them out.
