I was only told that I'd have the one appointment and nothing was mentioned about additional testing or appointments. I'm not too sure what to expect

You should have been sent an itinerary.
If they did not send you one you can get it from the patient portal. I use the Mayo Clinic app. You can get it from your device's app store. I use my ipad and while there I use my Android phone. They ask you to leave your phone on. I actually got a phone call while there last time while I was talking to an NP from another section of the hospital about another test appointment being scheduled.
You can also access the patient portal through their web page: https://onlineservices.mayoclinic.org/content/staticpatient/showpage/patientonline If you do not have an account yet you can create one. I attached a photo to show you what the sign in looks like and show with boxes where to click at to create an account.
You usually check in at the Davis Building. It has been over a year since I have been there. With covid-19 things may be different. Your itinerary should tell you.
I expect you will have your temperature taken and questions will be asked. Make sure you allow time for this as well as your travel time to the clinic. If you feel lost when you enter just stop at the info desk and ask questions.
