@nscappa, you're not alone. Finding CKD friendly meals and easy(!) recipes can be challenging. I took the liberty of modifying the title of this discussion to focus its purpose on sharing recipes and simple meals for people living with CKD.
I'll kick things off with sharing the cookbooks that @kamama94 has written and kindly shared PDFs of her draft versions.

I came across this cookbook - recipes seem like they have items on hand and not too fussy.

Everyone, please note that the government changes recommended intakes every so often and manufacturers and producers frequently change ingredients and nutrient values. For instance, since I created the recipes in the pdf, the recommended intake for potassium for healthy adults has changed. I'm fairly sure other values have changed so be sure to read every label on every item even if you bought the same thing yesterday. Good luck!
