I'm not a physician, but I wouldn't think that stopping those things would give you diarrhea and gas. It's excellent that you stopped them! Maybe you're taking some new medication or vitamin supplement? Taking too much iron for example could cause diarrhea. (or pomegranate juice can cause it too because of the iron in it) So, I think you should investigate what you're eating or ingesting and see how that affects it. Another possibility, maybe you eat milk products but have became lactose intolerant? It can develop even if you didn't have it earlier. Good luck!

nicotine and coffee are laxatives and thought maybe after decades of use of these laxatives bowel is troubled without a laxative, then if sluggish, bacteria have time to make the gas, then with gas comes diarrhea

but you are correct, could be diet
since pipe smoking is a finger fiddling habit I replaced it with peanuts; maybe the peanuts did me in, obviously have stopped the peanuts

I think am slowly improving

now have real sympathy for people with bloating/gas
