Another update from my side... After my 2nd Moderna vaccine, I felt tired, shortness of breath and muscle pain. I was diagnosed with low TS, MCV, Hb, Ht and extremely low iron and ferritin. Upper, lower and capsule endoscopy, as well as CRP didn't show any internal inflammations. Iron pills (Ferrofumaraat 200 mg, 3/week) didn't increase my levels after 4 months. After an iron infusion I felt absolutely wonderful, after having shortness of breath over half a year, I suddenly had no problems at all anymore, and was able to run and play with my kids again... for only 2 days.

After that I got hit hard with a COVID-19 infection, and I had shortness of breath and muscle pain, but less severe than after my vaccine. Blood test was showing that everything was below, or just above the the lower boundaries (except ferritin, which was sky high due to the infection). Since I did not know how much the COVID-19 infection had messed up, and whether the iron infusion was still in effect, I ordered another blood test 3 weeks after: TS, iron and ferritin were dropping, transferrin, MCV, Hb, and Ht were rising.

Once again, I've ordered another blood test in a month, to see how the levels are going. I've already discussed with my GP to do regular blood tests to keep monitoring my blood levels, and I'll schedule another appointment with my hematologist after my next blood test will show that my iron reserves are dropping even further.

I hope your problem resolves. I had another blood test recently that was ok, it I have to take iron supplements for the first time in my life. We are on our own as far as this vaccine problem exists. The pharmaceutical companies have seen to that.
