It sounds like sinus issues. I had Covid at the same time as you and although I could still breath through my nose, I had blockages and polyps. Polyps cause the strange smells. I have problems with an onion smell. I would suggest going to an ENT so they can look inside your nose.

Wow! I’m not the only one -
Skunk, coffee, bleach, Lysol, lavender and all the happens in the bathroom all smell the same. Going on 20 months.
MRI’s, scope in nose - no diagnosis. Courage! 0:-)
Horrible distorted sense of smell. Difficult to describe it, other than putrid, unfamiliar, repugnant. Ordinary food, scented lotions, flowers all smelled disgusting. It was so bad I lost 30 lbs because all food smelled unfamiliar and repulsive. After 2 years sense of normal smells is returning steadily. Got extra needed calories through Ensure because of its neutral taste and smell.
Seems like you should seek/interview a new PCP? From what I read and hear, me are just more interested in post covid conditions and think it would be important for that person to be an advocate and invested in getting yiu headed in the right direction...?.
