My husband has had 2 severe bouts of pancreatitis . His Lipase levels were in the thousands and he was hospitalized..
He can have no alchohol (which caused this) He was prescribed Creon a pancreatic enzyme that he takes 3x a day.
He lost alot of weight inut has gained much of it back since taking the Creon.
His doctor advised his pancreas is damaged as a result of his heavy drinking and if he starts drinking again he will die a very painful death. As far as diet restriction he really doesn't have any.

I can appreciate your concern for your husband's eating given his history of pancreatitis. I went to the National Pancreas Foundation website and they had a wealth of information, including Pancreatic Centers of Excellence where you can find a good doctor to advise you. Under the "Patient Information" tab there is nutritional advice and recipes as well. Here is a quote from that section:
"The amount of fat you should eat varies depending on your weight and height, but for an average person, it is felt that you should not consume more than 50 grams of fat a day. Fat intake could range between 30-50 grams of fat, depending on tolerance. Daily fat consumption should not be concentrated in one meal but spread throughout the day in possibly 4-6 small meals. Eating boneless chicken breasts and most fish helps keep your meals low in fat. Cooking with Pam or any cooking spray instead of oils also helps. You can add fat-free chicken broth when you need moisture."
I would encourage you to look through their website for more information about this disorder. Is your husband seeing a GI specialist who works primarily with pancreas problems?
