Based on hearing this question a second time, I dove into everything I could find about vaccines and iron deficiency - there just is no data, anywhere to suggest a link.
However, it is possible that he had some other (possibly unrecognized) infection that caused this - sometimes iron is depleted in the body while the system is fighting an infection. Unless his levels quickly return to normal, he needs a complete panel and physician consult to know what is going on.

I had the same experience. my iron levels for the last two donation attempts was in the low 12s. It needs to be 12.5 to be able to donate. I was pretty baffled because i donate every 8-9 weeks and have never seen this before. And the only major change in my health was the Pfizer vaccine.
I came across this thread because I started searching low iron linked to Covid.
I also was unable to give blood due to low iron levels - which I have never had. I was told they are seeing an increase in this and the day before, app. 8 out of 25 people could not donate because of low iron.
I was just talking to two friends - and one now has anemia (needing infusion)) and one also was unable to donate due to low iron.
Both have had covid and vaccine. I have not had vaccine but have had covid.
So this could all be coincidence, but the increase is concerning.
This happened to my step mom too. Not sure which shots she got but posted she was vaccinated on April 25th. Says she noticed feeling tired “in May.” By August she was in the hospital for several days for severe anemia. She’s 63. Diabetic. Former smoker. Healthy weight. Hope this helps! I also give blood regularly and have never had a problem with low iron. I received the 1st dose of Moderna 1/21/21. In mid February, I attempted to give blood and was rejected for low iron, There were no changes to my diet or exercise but I was feeling fatigued. The phlebotomist suggested i eat more iron rich foods, which I already was doing, and try again in several weeks. Same result. My number dropped from 13.8 to 11 which is below the 12.5 required. A routine blood workup by my doctor indicated that I was anemic and all red blood indicators were below normal. I am now taking Iron and B-12 and will recheck my blood in 3 months. I now know of two other friends, neither blood donors, who are experiencing the same problem after the vaccine.
Sounds like my experience. I also gave blood regularly but only once after the lockdowns were implemented. After my second shot of the Pfizer vaccine I contracted COVID, then later a few weeks after I took the booster shot I contracted COVID again. A couple of months ago I went to resume my periodic donations but was surprised to be turned down for low hemoglobin. My iron levels used to be on the high side of the acceptable range. My doctor ordered a range of tests and has given me a prescription for iron supplements. It is hard not to supspect COVID or the vaccine as playing some role in the anemia.
@nieeesha123- Good morning. I also couldn't find anything that suggests a link between Pfizer vaccines and low iron. But, each time you donate blood, you lose between 220-250 mg of iron. If you donate a Power Red, you lose twice that amount, about 470 mg of iron. It may take up to 24-30 weeks for your body to replace the iron lost through a blood donation. This is according to The Red Cross blood services.
If I were you I'd encourage him to get a complete blood panel and have the doctor help with low iron. Diet might not be enough to bring his levels to where they are healthy again. I would also encourage him to slow his donations down.

Is there a particular reason why he is donating so frequently?
