I eat a low AGEs diet (a diet low in advanced glycation end products) which is also an anti-inflammatory/antiaging diet....a whole food plant based with some wild caught salmon and sardines. I stay clear of foods cooked at high temperature, added sugar, and refined breads, cookies and cakes etc. And I definitely stay away from processed meats. I eat plenty of various colored vegetables and fruit, nuts, seeds etc. I take Life Extension Two Per Day multi and fish oil and krill oil. I also take 4 supplements that either interfere with the production of AGEs or protect from the damage caused by them. They include R-alpha-lipoic-acid 250mg, Befotiamine 750 mg, carnosine (500mg 2 times), and pyridoxal-5-phosphate (100 2 times), always with food. Google any one of these substances in quotes with "advanced glycation end products" to see why I take them. Google "diet low in AGEs" to see why I have chosen this diet for diabetes as well as overall antiaging. I also do extended periodic fasts 3 to 5 days but I am very careful and have a pretty good understanding of what I am doing.

I am with you on your take regarding AGE's. Over a year ago I started taking L Carnosine daily. One thing I have noticed is that the brown age spots on my hands have stopped proliferating and the ones already there are somewhat faded now. I do believe it's from the L Carnosine. My diet is not as tight as yours but it steers in that direction. I know that you are on the right track for your health. Best, Hank
