My nephrologist told me to increase my dietary potassium, so while my husband consumed his chips, I had a huge artichoke with my lunch. I eat it California style. I steam it for 45 minutes and then place it in the fridge to cool. Then I peel off each leaf and score the underside of the leaf using my lower teeth and slowly eat the tasty treat. I dip each leaf in a sauce and continue on for about 30 minutes (I need some time to enjoy my wine). When I get to the choke, I twist it off and finally get to the heart of the artichoke. It is so delicious and I am happy to be able to eat this again. I make my sauce from an avocado. This is also high in potassium. The doctor told me to eat more forbidden foods like tomatoes and potatoes too.

@darlingtondoll Good for you Jane I wouldn't be good to eat any of them as I dont care for artichoke except in spinach artichoke dip and I cant eat nightshade vegies . My fibro flares when I do . I use advocado in my smoothies . I scoop a teaspoon put in plastic wrap and freeze when I want it I use one then .

@darlingtondoll, Now those instructions I would love to hear from my docs! Some of my favorites, you mentioned! Have been told the best test of the perfect artichoke is to squeeze the leaves; if they squeaks choose it...have you heard that, too?
