VERY LOW FRUCTOSE, LOW FODMAPS, AND GLUTEN FREE RECIPES AND DIET - SUPPLEMENTS AND DRUGS
Since the diet is so narrow, I also take calcium carbonate powder (NOW brand) or tablet (365 brand). Note that calcium carbonate is just as absorbable as calcium citrate (which has sugars - citrus- in it) if you take it with food according to one doctor, and my labs are normal for calcium. Also take Vit D3 2200 I.U. capsule (Solar), multivitamin/mineral (365 Age 50+ Multi Iron Free), and vitamin B complex (Naturemade Super B Complex.) I realize what I take may not work for everyone since we are all different, but this gives a start. Other supplements: L-glutamine (bulksupplements.com or Nutrabio.com), lactase (Lactaid Fast Act), probiotic (Flora Advanced adults Probiotic Seven Senior Specific Strains), and Phillips Milk of Magnesia. L-glutamine is supposed to heal the intestine; I use it as a maintenance dose. The same for the probiotic. Regarding the Phillips, I have the constipation version of fm, and use 4 T every 2d or 3rd day. I believe the food poisoning left me with a sluggish digestive system because I also need the prescription drug Creon for the pancreas even though it checks out normal. Tried stopping it and there was a noticeable difference. Also take a compounded drug, ketotifen, which I also tried stopping and realized I still need. Ketotifen is supposed to quiet the mast cells in the gut and it helps. My medical librarian found this for me (among many other things). Also take sucralfate, compounded. Finally, take OTC Prilosec which I'm trying to get off of. Am down to 1/4 tablet/ day. All for now.
@jackiem95, @guthealth, @baponline, @pjss48, @redhead63, @sarcomasurvivor, @gracheig. Just discovered a delicious truly no sugar bacon that went down fine! It is made by a company called Pedersen. There are 2 varieties. 1. Uncured No Sugar Buckin Bacon (pork, hickory smoked). 2) Uncured no sugar hickory smoked turkey bacon. Health food stores may carry these, but not here. Here they carry a Pedersen no sugar pork bacon that does contain the added natural sugars citrus extracts and pomegranate extract. You can order the bacon by calling the Simple Grocer 1-325-451-7545. (Simple Grocer is the distribution center for Pedersen products.) The bacon is shipped frozen in dry ice. The Buckin bacon is lower fat than the usual bacon, which is a good thing. It is probably the best bacon I've ever had.
Just made a new discovery. I made beef pot roast and it bothered my stomach when it shouldn't have. I had cooked it in the oven 3 hours but it was still on the tough side so I thought that might be the problem. So, I made another roast a couple weeks later and cooked it 5 hours in the oven. It was very tender but bothered my stomach even more. Plus, it had a slightly strange taste. I remember seeing somewhere on the internet that people with fm have trouble digesting iron. Voila! I had made both roasts in a cast iron dutch oven. While frying potatoes or doing something else quickly in cast iron doesn't introduce much iron, cooking a pot roast in liquid for a long period of time introduces a lot!
Another recipe, for breaded baked chicken. I used Trader Joe's frozen chicken pieces, thawed, because there are no bones, and Cream of Rice (raw) for the breading. Mix the cream of rice with a little salt and pepper and whatever herb you want. I used sage and thyme. Did the chicken pieces in a beaten egg and then in the breading mixture. Place on a greased baking dish and bake at 350 degrees for 30-40 minutes until chicken is done. This comes out with a bit of a crunch and is quite tasty.
New find: no sugar lunch meat. It is Plainview Farms Oven Roasted Organic Turkey Breast, 99% fat free. Costco carries it. I've tried it, and it went down well. It is not super tasty, but it is some protein you don't have to cook! I used it in a hot dish.
MORE RECIPES AND TIPS.
A. Chicken, Potatoes, and Potato Chips Casserole.
Peel and slice russet potatoes and put in bottom of baking dish. Salt and pepper them and add a sprinkle of thyme.
Place deboned and skinless chicken thighs on top of potatoes. Sprinkle with salt, pepper and a good amount of thyme.
Sprinkle Kettle Band unsalted Kettle Chips on top of chicken.
Cover with foil and bake at 360 degrees for 60 minutes.
B. Tuna Patties
Two 5 ounce cans albacore tuna in water
2 large russet potatoes microwaved and mashed
2 eggs
1 T Pompeian Extra Light Tasting olive oil
Sage, thyme
Mix and form into 3 patties. Fry in Pompeian Robust Olive Oil on medium until browned on both sides.
Cover and cook on warm for 5-10 minutes.
C. Pork Chips with Broccoli Slaw
Brown pork chops on both sides.
Turn to low, cover, and cook until half done.
Turn chops over and add broccoli slaw to pan. Cover. The slaw cooks down quite a bit so decide how much accordingly.
Cook until done, stirring slaw occasionally.
Serve chops with slaw alongside.
Thick pork chops take 10 or more minutes per side.
D. Fritatta.
Scramble eggs in bowl.
Park cook frozen broccoli florets in microwave; add to eggs.
Cut up cooked Pederson's Farms turkey bacon and add to eggs
Add a few cooked mushrooms to eggs.
Add oil to frying pan. Fry egg mixture on low without turning; rather, lift up edges so uncooked eggs can run under. Cook until no more will run under the edge and then cover and cook on warm several minutes until top of eggs mixture is done.
Serve with grated cheese as tolerated.
A few tips.
1. Walnuts are much better tolerated than most others because they contain no fructans. Sprinkle a few on oatmeal to beef up your breakfast. They still have sugar, so don't overdo it.
2. Vinegar and oil made with Pompeian Extra Light Tasting Olive Oil and a little bit of Rice vinegar. I like a few sprinkles on cooked broccoli.
3. Pepper on Kettle Brand unsalted kettle chips. If you use only a small amount, you can't really taste the pepper but it adds flavor.
4. I can no longer use Trader Joes' canned chunk white chicken in water for some reason. The label hasn't changed, so don't know why.
Hope everyone is coming along well. We have quite the challenge to deal with.
Thank you for providing these recipes. However, I would caution anyone with IBS to consult a list of high Fodmap Foods before preparing them. There are some foods that may be OK for the writer but may cause problems for others—e.g. mushrooms and broccoli.
