@jakedduck1 @lioness There is a small zucchini like squash, usually about 4-6 inches long, available all year. In many of the stores they call it "Mexican squash". Very flavorful, never bitter, and used where you might use zucchini. I have used it for zucchini bread, and love it sliced and steamed, served with a dose of salt-free seasoning. I limit my intake of tomato sauce and tomatoes due to kidney issues. Bet you could use pasta sauce rather than tomato sauce in the casserole. Use rice along with meat and veggies [corn, cut green beans, peas, carrots, onions, celery].
