Here it is: GF Carrot Cake or muffins

1 Cup sugar
2 eggs
¾ cup veg. oil
1 ½ cups gluten free flour
1 ½ tsp baking powder
1 tsp baking soda
1 1/3 tsp salt
1 tsp cinnamon
1 ½ cups grated carrots
½ cup crushed pineapple

Beat sugar, eggs, and salad oil till light. Sift flour, baking powder, soda, salt and cinnamon. Add to above mixture and beat at medium speed. Add grated carrots and pineapple. Mix till incorporated.

Empty batter into greased 9 x 13 pan or about 18 muffins or cupcakes. Bake in 350 degree oven for 30 min or until cake is springy when depressed with finger. (If you are making muffins you will have to adjust the time.) Let cool.

May be frosted with your favorite cream cheese frosting or served with whipped cream or cool whip.
