Thanks for the article. What makes even more of a bugger on top of having Celiacs is I am lactose intolerant, so dairy doesn't set well with me, which of course, is full of calcium. I will check this article out. Thanks again.

I have the same problem, @greff. I have somewhat advanced osteoporosis but am also lactose intolerant. As with most lactose intolerant people, I am able to eat aged cheeses like cheddar, swiss, and the hard ones like parmesan, romano, padano, and asiago. I do miss being able to have ricotta in lasagna though. When I make pizza, which is pretty rare, I use provolone instead of mozzarella. We like it more now, it has more flavor.
