The only option for me would be finding a good butcher which I was never able to find. It is even hard to find really fresh caught fish of all things and we live close to the ocean !!! The only place that used to sell it was closed during pandemic. It is easy for stores to sell fish that is not fresh since nobody actually here in the Bay Area knows how fresh fish looks like *sigh.
