@soli - not only are the broccoli stems very good for you, they taste great as well. I think they taste better than the florets, so I always include those.

Same with cabbage cores - I don’t throw those out. I either steam them until tender, or just mince them very fine and add to salads…or I just lightly salt them and eat them raw while I’m doing the other cooking. Yum!

We refer to "cabbage cores" in Europe as "cabbage hearts" lol and they are regularly eaten as you described - removed, lightly salted and eaten raw. In autumn time in many Euro countries it is a long held tradition to make home made sauerkraut and that was the time of great fun for kids - we would sit around and wait for our turn to get "cabbage heart" lol - what a healthy treat ha ha. Not to mention all of the health benefits one gets eating "vitamin and probiotic bomb" of sauerkraut 👍.
