My experience of being gluten free with type 2 DM is that the store bought GF products are often made with starches (tapiopa, potato, corn) and other GF flours that have a high glycemic index and may spike blood glucose, They also often have high salt levels. While almond flour has a very low glycemic index, I can't eat almonds. I have used oat flour (Bob's Red Mill GF oat flour) which is widely available in local groceries to bake oat flour bread, cookies, just about everything - from online recipies. I am also able to be on a low salt diet and avoid many additives including guar gums and other thickeners. I bake once a week and freeze what I bake. Suggest look at the ingredients in "retail" Gluten free foods for the flours used and additives. Look up glycemic index of flours.

Hashimoto’s can affect thyroid levels and that is why I am on a medication. I had symptoms that diet changes alone did not change getting my T3 and T4 in the normal ranges.
