But free fructose, though it goes through a different pathway, is ultimately a worse problem than it is from sucrose. I was unclear on that early on, and I'm not sure what the current textbook is on it - or how that is accounted for GI/GL numbers. As with the cream, perhaps not comprehensively.

@carbcounter I think that applies to high-fructose corn syrup, which overwhelms the system with too much at once. For fructose occurring naturally in fruits (including dates), the fibre in the fruit ensures that you body can keep up with converting it.

Obviously, if you're diabetic or pre-diabetic, you need to be very careful with both glucose and fructose.
