I had the same problem for years after Covid. After seeing multiple specialist, I was sent to an allergist to be tested for allergies because I constantly had sinus infections, ear infections, cough, mucus buildup, and loss of my voice or voice cracking.
As the allergist was performing his assessment before testing to see what I was allergic to, he noticed I was coughing alot and that I would loose my voice while talking. He referred me to a voice specialist who found out my constant cough had inflamed my vocal cords. She put my on medication to calm the inflammation which helped with the feeling of something stuck in my throat.
My allergist found a long list of items I am allergic to since Covid. I have been receiving the allergy shots which has helped with alot of the mucus. No more ear or sinus infections since shots started.
I also found out from an ENT that my Salivary Glands would swell and block my swallowing. I began consuming foods that made me mouth water, or mints that produce more saliva. My glands swelling has improved so I can eat more than soft foods.
Just some things that I have found in my 5 years of living with Long Covid that has helped. I am not saying this will work for everyone. I am just saying, listen to your body and find doctors who will listen to you and your symptoms.

I have had allergy testing too, both blood serum and prick test, but nothing came up. Did you have another type of panel? I feel like the ones they give in my system are very routine and focus more on trees/pollen than any foods, etc.
Also, I think dehydration has something to do with it - as you were mentioning your salivary glands. I have issues in my throat and mouth and have been wondering recently if it is connected to dehydration, even though my urine is not showing any tell-tale signs of that being the case.
