@bbqpitmaster Roasted vegetables with butter sound amazing too: more of a northwestern European flavour profile than a Greek one, which makes for nice variety.
Have you tried adding lots of fresh rosemary from the garden (or grocery store) to your veggie roast? That could work nicely.
