(Off-topic) Eggs and joy
In the hospital for a routine test (nothing suspected). I grabbed breakfast at the cafeteria during a waiting period:
"Can I substitute something for the meat?"
"How about an extra egg?"
Nice to have a little joy boost (there hasn't been any egg shortage up here, but that's still kind, and the yokes were perfectly cooked).

Funny. I started pelvic floor PT at Mayo Phoenix, Thought I would try that before an AUS. 2 weeks ago the Dr called in with an emergency while I was in the waiting room. Bummer. The nurse gave me a $10 certificate to the cafeteria. The grill was open. You order on the kiosk. I started to order a cheeseburger. Then I saw the mushroom burger with swiss. I ordered that. It came as a huge bun size Portobello mushroom no meat. Looked like an octopus. Not what I had in mind. You might have enjoyed it:)
Yeah, portobello mushrooms make OK patties if they don't overcook them until they're dry and leathery, but I prefer black bean or lentil. Anything but the "Beyond" stuff (if I wanted something that tastes like meat, I'd just eat meat). 😉
One egg for kindness, two eggs for survival. Hospital math finally makes sense.
It's so funny, I switched us to mostly vegetarian diet now ( we were on Mediterranean by default since we are originally from that region) and I do not miss meat one bit ;). I discovered by pure chance that I am "vegetarian at heart" naturally XP, ha ha ! My husband at the other hand adds fish or egg on salad or in veggie meal, at least for now. Maybe he will be able to have pure veggie meals at least 3 times a week later on. I LOVE mushrooms in any shape or form, grilled whole big juicy poratbello marinated with herbs and balsamic was always my fav. - omg , I am hungry now lol...
