All the suggestions are solid, but I'd like to add one more.
Try to have your mother tested for Lyme disease. In late stages, it can cause neurological issues involving muscles, and most concerning, rapid onset of severe psychiatric symptoms.
I do hope you get answers soon and appropriate care for your poor mother.
