Welcome to Mayo Connect!
I recognize the symptoms you mention. I had my gallbladder out years ago but I can still get the pain you are feeling. Also after eating certain fatty foods.
The gallbladder would release a certain amount of bile when needed with a fatty meal. Since there is no gallbladder to store bile, the bile flows from liver through the common bile duct into the small intestine.
At times, the opening is too small or there’s tiny stones blocking the opening.
I think your doctor has a good plan- MRI and ERCP if needed. I needed it twice, years ago.
You will learn what fats you can’t tolerate.

Ok thank you, I kind of worried about ERCP it seems to have a potential for even more complications. I do know that the place i go to they have someone from a boston medical hospital come and do the procedure so at least the person would be an expert on it.
