I just eat veggies that don’t have so much Vitamin K. Got on a multivitamin that has Vitamin K and when we get my INR to even out we are going to start introducing some Vitamin K veggies back – haven’t had much since May 2009. Can’t wait to start eating salads again. I googled Vitamin K veggies a long time ago to get a idea what ones had the most and changed my diet from that.
I’ve been on and off of coumadin for the past 25 years. The whole key is to be consistent in what you eat. If you like your veggies, eat your veggies. Just don’t eat veggies one week, then not the next week. Be consistent. Long story short, the more vitamin K you eat, the higher your dose is going to be. Avoid adult beverages, cranberry juice, and NSAIDS as these can mess with your INR numbers.
