"Gluten Sensitivity" May Be a Misnomer for Distinct Illness to Various Wheat Proteins

There are other wheat proteins, besides gluten, that may make people sick. "Gluten sensitivity" is a relatively new diagnosis and it's prevalence is still unclear. Doctors are hoping new research will allow them to test for various sensitivities to different grain compounds.
