Recipe: Broccoli with Garlic and Lemon

This mix of broccoli, lemon zest and minced garlic is the perfect trio. Looking to add a little crunch? Consider toasted almonds. Be careful, though, they have the potential to brown (and burn) quickly!

Number of servings: 4

Ingredients

  • 4 cups broccoli florets
  • 1 teaspoon olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon lemon zest
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Directions

In a small saucepan, bring 1 cup of water to a boil. Add the broccoli to the boiling water and cook for 2 to 3 minutes or until tender. Drain broccoli.

In a small sauté pan over medium-high, heat the oil. Add the garlic and sauté for 30 seconds. Add broccoli, lemon zest, salt and pepper. Combine well and serve.

Sounds like a great recipe... I love broc with lots of garlic and EVOO! So good for us.

Keto people (like me) know that the net carbs for the dish would be only 4 grams... and so darn tasty!

Hi @larryg333 ! Yes, my favorite way to prepare broccoli is simply with lemon juice, garlic, and a drizzle of olive oil. You can't go wrong! I like to get it a little crispy by roasting it. Let me know if you try this recipe out!

I also enjoy roasted veggies. I'm assuming you boil the broccoli first and then put it in the oven to crisp it?

I love broccoli roasted and I do not boil first. I also make asparagus this way. It is so GOOD!
