Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

@ jakedduck1: simple sample recipe - to see if it’s quick enough and tasty enough for you. Ingredients: tortellini of your choice, whatever is permitted, chopped garlic, julienned sun-dried tomatoes (come in little pouches, already chopped, usually near the vegetable section), 1/4 cup or so pine nuts or chopped walnuts, pesto from a jar.
Boil tortellini as per package, drain. Save about 1 cup of the water that you cooked the pasta in. In medium non-stick frying pan with a hint of olive oil stir the tortellini over medium heat for about 5 minutes until they are just light brown. Add in the garlic (I usually use about 3 cloves, you can use more if you like), and the pine nuts or walnuts, and 2 Tbsp. of the sun-dried tomatoes. Stir for 2 to 3 minutes. Add about 3 Tbsp. of the prepared pesto, and 1/2 cup of the pasta water. Cook for another minute or 2 until heated through. If permitted, add some parmesan cheese.
This makes a nice change from tortellini smothered with canned tomato sauce, and to me tastes pretty good. I haven’t tried it, but I’m pretty sure leftovers could be reheated in the microwave.
Oops... just realized that the pesto is perhaps on your forbidden list. As an alternative, toss in some fresh basil at the very end. Sorry about that!

Hello all Galloping Gourmet here,
I was down to dry cereal but my friend came to my rescue. She brought me some really thick pork chops, potatoes asparagus and salad. She said cook at 350 for 40 minutes which I did but they weren’t done so I kicked it up to 400 for another 15 minutes but I forgot the timer. 5 1/2 hrs later I went in the kitchen and I noticed I forgot to turn off the oven. Haha, I also forgot to take out the chops. They weren’t burnt amazingly enough but they sure were tender.
My friend refuses to accept any money and won’t take any food. Any suggestions how to pay her for being so kind. Gift certificates is all I can come up with.

That’s a nice friend you have. Gifts depend on how well you know her and her tastes. Does she have a pet? You can include a pet toy in a little gift basket from the supermarket which is easy to put together if you know what she likes. Don’t forget fresh fruit and vegetables and cheeses with a nice loaf of good bread. You could reciprocate by taking her to lunch (and prepaying) or having lunch delivered. You could get cooking items or artisanal salts, good olive oil, kitchen tea towels(keep them on the simple side)..Goggle gifts for cooks and order online. A half hour massage locally, plants. You know her and we don’t so it’s hard to suggest. Anyone can buy me a decent wine by the way....wine and chocolate...I’m easy. Gift cards are easy too but I prefer to put a little thought into it.

@jakedduck1 Does she have a hobby or pastime that she enjoys? An event that she would enjoy going to that you could escort her and take her? Something she has said she wants to get "at some point" but hasn't yet?

@jakedduck1 Glad your friend came to your rescue. There are so many great ideas here for gifts, the only thing I can add is flowers! If you have an idea of when she will be coming go to trader joe’s Or Whole Foods, they both have great florals. If you have neither of those then your local supermarket. I like having orchid plants and have given them too. I try to pick them up when they are $10 - $15, or if a gift I will go higher. Mine generally last at least two months so they’re a better buy than cut flowers. There are other flowering plants too, but the orchids are very easy care.

I have my son, daughter in law and grandkids in Orlando closer to the East Coast and they will get some tropical storms so they’re watching it. They may decide to scoot on over to us with the doggies, about a 2 hour drive. All schools closed Tuesday in my area and closer to east coast on Wednesday. They’ve suspended tolls on some major roads. Storm is only moving about a mile an hour. We have a generator for both houses (my daughters and mine) which runs the fridges and some outlets. Also 2 window ac units for my smaller place which would run off the generator. Then we can have a hurricane party/sleepover .

Last hurricane 2 years ago we lost power for 3 1/2 days but spent 2 of them at a friends huge home who had generators that powered everything. Had at least a dozen friends staying with them plus all the animals , 2 large refrigerator freezers and tons of food. My kids in Orlando were out 2 weeks and spent part of that time in a hotel and then were able to borrow a portable AC.
But still a long time.

Been here 25 years and have been fortunate enough not to have any major damage but others a few miles from me don’t fare so well. Had hurricanes and blizzards in Long Island where we lived...price you pay for living near the water. Pray for the people in the Bahamas. If I had a choice between fires and storms, I would choose storms. Time to get some more trees trimmed. I have one that drops acorns on my roof and scares the crap out of me on a windy day lol.

What did you cook the pork chops in? Had to be a liquid or you would have had really crispy chops. Surprised you didn’t smell them cooking....or were you overdosing on candy somewhere.🤔

I think they cooked in soup.
My nose doesn’t work worth a lick. Couldn’t smell a thing, that’s why I thought I only forgot to turn off the oven.
