Recipes, Food Tips, Healthy Eating & More

Posted by Debbra Williams, Alumna Mentor @debbraw, Feb 22, 2019

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

@jakedduck1 I have not used purple asparagus. Curious...Does it retail the purple color when cooked?

@parus
Usually not which is why I usually use them on a relish tray. Sometimes they retain some color but they usually lose most of the color because of the heat.

I tried something new and found it to be quite yummy, easy to fix and no mess to clean up. Plums are starting to come into season as well as apples. I cut and cored 1 tart apple and cut it into small chunks, then I did the same with a black plum. I placed both in aluminum foil with a healthy sprinkling of cinnamon and also a few raw cranberries as I like the sweet and tart thing. I baked this for 1 hour in a 350 degree oven then turned the oven off and allowed the fruits to remain for another 30 minutes or so. I added no sugar or extra sweetener. I found this combination to be a real taste treat!! Leaving the peelings on of course as the pectin formed a sticky, sweet glaze.

Oh my mouth is watering! @parus You have inspired me! I have peaches-- I bought a bit too many--that need to be eaten. I'll let you know what I make.
And your day lilies are the prettiest color I've seen.

@lioness Linda, we have wild blackberries at our new home. Next week they should be getting close to ripe. I plan to make simple cobblers, using a mix like Bisquick. Top with whipped topping or ice cream and you have a real winner!

Hi,
I’ve been roasting peaches for many years..use them with yogurt, oatmeal or in salads or by themselves. Have them as a side for dinner with something like pork chops.
Oven is at 450 and I usually halve the peaches, pit them and either coat them with a mix of balsamic vinegar
and cream or usually with coconut sugar and cinnamon sprinkle and a small amt of olive oil or a light spray of avacado oil.
Takes about 15 or 20 minutes. You can slip the skin off once they are cool if you want.

I roast grapes and pineapple a lot along with root veggies. Satisfies my sweet tooth. Roasted grapefruit slices once for an arugula and goat cheese salad....very special. There’s enough water in these fruits so a minimal amount of olive is needed.

I’ll throw anything in a high heat oven....I cook my boneless chicken breasts at 450....10 to 12 minutes each side....spray with avacado oil and coat with bagel seasoning and a tiny bit of breadcrumbs and then spray oil lightly again. Really press those seasonings into the chicken. Let it rest and it is browned and succulent....never dried out.

Talking about food again....hmmm....favorite subject👨‍🍳

@parus- Haha. I do love garlic but I think that some people can't handle it. I agree though that fearing a vampire is more pleasing.
